Vegetable Soup

ingredients
  • 1 onion, chopped
  • 1 leek sliced
  • 3 carrots, sliced
  • 2 sticks celery, chopped
  • 4oz/113g button mushrooms, halved
  • 3oz/84g swede, diced
  • 2 vegetable stock cubes, dissolved in 2 pints of boiling water
  • 4 sprays Fry Light one calorie oil
method
  1. Spray large stock pot with 4 sprays of Fry Light. Add chopped onion and saute for 5 minutes. Add a little boiling water if the onion starts to stick.
  2. Add all the other remaining ingredients. Cover and simmer for an hour or until the vegetables are soft.
