Basic Pancake Mix
  • Serves 4
  • UNITS: 2 per serving
  • FAT POINTS: 0 per serving (using flour from bread allowance)
  • CALORIES: 84 per serving
  • 2oz/56g plain flour
  • 1 egg
  • Pinch of salt
  • 3 fluid oz/100ml skimmed milk
  • Few sprays Fry Light
  • Sugar substitute & lemon juice to serve
  1. Seive the flour into a bowl and add a pinch of salt. In another bowl beat together the egg and milk. Make a well in the centre of the flour and slowly add the egg mixture and beat into a smooth batter. For best results leave to one side for 30 minutes before using.
  2. Heat a small, non-stick frying pan and spray with Fry Light. Add a quarter of the batter mix and swirl around the pan so that it covers the base. Cook over a medium heat for a few minutes then, when the underside is brown, toss and cook the other side for a few minutes.
