Tomato & Herb Bruschetta
  • Serves 4
  • UNITS: 6 per serving

  • CALORIES: 180 per serving
  • 8oz/226g French Stick bread
  • Few sprays of Fry Light 1 cal oil
  • 1lb/454g ripe tomatoes, chopped
  • 2 cloves of garlic, crushed
  • Half teaspoon sugar substitute
  • 2oz/56g black olives, chopped
  • 2 tablespoons fresh basil leaves
  1. Slice the bread diagonally into 8 pieces. Spray each slice with the oil and place under a preheated grill for a few minutes on each side until crisp.
  2. Cook the tomatoes, garlic and sugar substitute in a pan until softened, Stir in the olives and season well.
  3. Spoon the hot tomato mixture onto the bread and scatter with torn basil leaves before serving.
