Baked Cod with Tomatoes & Balsamic Vinegar

ingredients
  • 1.5lbs/680g skenless cod fillet, cut into 4 steaks
  • 1 large red onion, finely chopped
  • 1 garlic clove, crushed
  • 4 ripe tomatoes, skinned an diced
  • 2 teaspoons balsamic vinegar
  • 2 teaspoons chopped fresh parsley
  • Fry Light
  • Juice of half a lemon
  • Salt & freshly ground black pepper
method
  1. Pre-heat oven to 200°C/400°F/gas mark 6. Season the cod steaks well on both sides with salt and black pepper and place in a ovenproof dish.
  2. Spray a non-stick pan with Fry light and cook the onion until soft. Add the garlic and tomatoes and simmer briskly for 4-5 minutes.
  3. Add the balsamic vinegar, parsley and lemon juice. Season to taste with salt and black pepper.
  4. Serve with seasonal vegetables or, for low fat slimmers, with boiled rice from your daily allowance.
