Dijon Pork Chops

ingredients
  • 4 x 4oz/113g lean pork chops
  • 2 garlic cloves, crushed
  • 3 tablespoons tomato puree
  • 1 teaspoon caraway seeds
  • 1 tablespoon Dijon mustard
  • 1 teaspoon cinnamon
  • 1 teaspoon brown sugar
  • ½ pint/150ml cider
  • Salt & black pepper
method
  1. Remove any fat from the pork chops and place in an ovenproof dish.
  2. Combine the remaining ingredients in a bowl and spread over both sides of the pork chops.
  3. Cover and leave to marinate for 1 hour.
  4. When marinated, cook the chops under a pre-heated grill for 6-8 minutes each side. Serve with mixed vegetables.
