Quorn Stir Fry
  • Serves 4
  • UNITS: 0.75 per serving

  • CALORIES: 148 per serving
  • 12oz/336g pack of Quorn pieces
  • Few sprays of Fry Light 1 cal oil
  • 1 red pepper, sliced
  • 1 fresh red chilli, deseeded and finely chopped (optional)
  • 1 bunch of Spring onions, sliced into 1 inch lengths
  • 1 small red onion, sliced
  • 1 garlic cloves, crushed
  • 2 tablespoons Chinese Black bean Sauce
  • Half teaspoon sugar substitute
  • 8 teaspoons water and one tablespoon dry sherry
  • 1 teaspoon cornflour
  1. Heat a non-stick wok or frying pan and spray with the oil. Add the red onion and pepper and stir fry for 1 minute.
  2. Add the garlic, chilli, if used, and Quorn pieces and cook for a further 3-4 minutes or until the Quorn pieces take on a light golden colour.
  3. Add the sauce ingredients and allow the mixture to come to the boil and thicken slightly, stirring all the time. Serve immediately with salad, rice or noodles from your allowance. (Please add extra points, units or calories where applicable for this)
