Cheesy Leeks

  • 8 large leeks
  • 8oz/226g lean minced beef (12% fat maximum)
  • 125ml beef stock
  • Few sprays of Fry Light
  • 4oz/113g grated half fat cheddar
  • 1 medium onion, finely chopped
  1. Pre-heat oven to 200C/400F/Gas 6
  2. Trim the leeks and cut in half (if very large). Put into boiling water for 5 minutes. Drain well and set aside.
  3. Spray a non-stick pan with Fry Light and brown the minced beef for a few minutes, add the finely chopped onion, stock and simmer until tender. Pour away any excess liquid. Mix the beef with 2oz/56g of the grated cheese and finely chopped onion.
  4. Split the leeks down the centre and open out. Place the beef and onion mixture on top and sprinkle with the remaining cheese. Bake in the oven for 25-30 minutes.
