Savoury Tomatoes

  • 4 large tomatoes
  • 1 hard boiled egg
  • 4oz/113g lean ham, roughly chopped
  • Few sprays Fry Light 1 calorie oil
  • 1 medium onion, finely chopped
  • 1oz/28g grated half fat cheddar cheese
  1. Pre-heat oven to 180C/350F/Gas 5
  2. Cut the tops off the tomatoes, set the tops aside to use later. Carefully scoop out the insides with a small spoon and roughly chop the pulp.
  3. Spray a non-stick pan with Fry Light and brown the chopped onion for 5 minutes. Stir in the tomato pulp, chopped boiled egg, chopped ham and grated cheese.
  4. Fill the hollowed out tomatoes with the mixture and put the tomato tops back in place. Bake in the oven for 15 minutes or until heated through.
