Spicy Plums
  • Serves 4
  • UNITS: negligible per serving (use fruit from allownace)

  • 12 plums
  • 4fl oz/113ml red wine
  • 9fl oz/225ml diluted sugar free blackcurrant squash
  • 2 cinnamon sticks
  • 2 vanilla pods
  • 2 cloves
  • 1 teaspoon ground cinnamon
  • 6-8 level tablespoons Canderel
  1. Split the vanilla pods and put into a pan along with all the ingredients. Place over a medium heat and bring to the boil. Cover, reduce the heat and simmer gently for 6-8 minutes or until the plums are just tender.
  2. Remove the plums with a slotted spoon and transfer to a serving dish.
  3. Bring the remaining liquid to the boil. Remove from the heat. Strain over a jug and pour over plums. Cover and chill overnight to let the flavours deepen.
  4. Serve the plums straight from the fridge, or warm through first in a pan.
