Mediterranean Roast Vegetables

  • 2 courgettes, sliced
  • 12 cherry tomatoes
  • 4 small red onions, quartered
  • 1 red pepper, diced
  • 1 yellow pepper, diced
  • 1 green pepper, diced
  • 1 tablespoon choped basil leaves, fresh or dried
  • Salt & black pepper, to season
  • Few sprays of Fry Light Oil
  1. Mix all the vegetables together in a large bowl.
  2. Spray with Fry Light and add basil and good quantitly of freshly ground salt and black pepper.
  3. Stir thoroughly until the vegetables are evenly coated.
  4. Place in an ovenproof dish, spray again with Fry Light.
  5. Cook on top shelf in a hot oven for 20-25 minutes, turn after 10 minutes.
  6. Serve as an accompaniment with meat or fish, or stir in some warm, cooked pasta and serve immediately.
