Potato, Tomato & Leek Layer

ingredients
  • 8oz/226g potato
  • 2 onions
  • 2 garlic cloves
  • 2 small leeks
  • 4 tomatoes
  • 4 eggs
  • Handful of fresh herbs
  • Fry Light
  • 10oz/280g Quark
  • Salt & Black Pepper
  • 1oz/28g grated half fat cheese
method
  1. Pre-heat oven to 200°C/400°F/gas mark 6. Prepare the ingredients: slice potatos, par-boil them for 3-4 minutes and drain; chop the onion, crush the garlic, slice the leek and tomatoes, beat the eggs and chop the herbs
  2. Fry the onion and garlic in few sprays of Fry Light for 3-4 minutes until soft.
  3. Stir the Quark into the beaten eggs, add the onion mixture and herbs and season well.
  4. Spray an ovenproof dish with Fry Light. Arrange half the potato, leek and tomato slices at the bottom. Top with half the egg mixture, then repeat with the remaining ingredients.
  5. Sprinkle over the grated cheese and bake for 25-30 minutes until the mixture is bubbling and just set. Allow to stand for 5 minutes before serving with salad or vegetables
