Red Onion Marmalade
  • Serves 4
  • UNITS: 1 per serving

  • CALORIES: 85 per serving
  • This rich, sticky onion marmalade is ideal with chicken or low fat sausages ot it can be eaten cold as a garnish.
  • 3 large red onions - peeled and thinly sliced
  • Fry Light Spray Oil
  • 150ml red wine
  • 3 tablespoons Balsamic vinegar
  • 1 tablespoons dark brown sugar
  • 1 teaspoon fresh thyme or rosemary
  • salt and black pepper
  1. Spray a large, heavy bottomed pan with Fry Light, covering the base.
  2. Add the onions and soften for about 10 minutes.
  3. Add the rest of the ingrediants, stir and bring to a simmer.
  4. Cook over a gentle heat for approximantely 45 minutes, leaving the lid off and stirring frequently. If it begins to stick add small quantity of water.
  5. At the end of the cooking time nearly all the liquid should have evaporated, leaving glossy onion marmalade.
