  • 1Żoz/42g cooked brown rice
  • Half a red pepper, diced
  • 1oz/28g sweetcorn
  • 1oz/28g cooked garden peas
  • 2 tablespoons reduced calorie salad cream
  • 2 tablespoons low fat plain yoghurt
  • chopped spring onions to garnish
method
  1. Mix all the ingredients together, sprinkle with chopped spring onions and serve with endive and lamb's lettuce
