Spicy Christmas Torte
  • Serves 6
  • UNITS: 1 per serving (using fruit from allowance)
  • FAT POINTS: 1 per serving (using fruit from allowance)
  • CALORIES: 166 per serving
  • 1 lbs/681g cooking apples, peeled, cored and sliced
  • 4 level tablespoons mincemeat
  • sugar substitute, to taste
  • 1 sachet gelatine
  • 4oz/113g low fat soft cheese, e.g Quark
  • 3 egg whites
  1. Put the apples and mincemeat in a suaucepan and simmer gently until the apples soften. Stir until the apples just begin to soften but before they become a mush! Add sugar substitute to taste and set aside to cool.
  2. Make up the gelatine with a small amount of very hot water. Allow to cool. Mix into the apple mixture. Add the soft cheese or Quark and stir well.
  3. In a separate bowl, whisk the egg whites until they form soft peaks. Carefully fold into the apple mixture using a metal spoon. Bake at 160 C for 15 minutes until slightly browned. When cooled turn on to a flat serving dish and chill. Delicious served with a dollop of fat free Greek yogurt.
