Cheesy Yogurt Topped Fish

ingredients
  • 4 x 6oz/168g fresh or frozen boneless, skinless cod or haddock
  • 6oz/168g half fat grated cheese
  • 10oz/280g natural low fat yogurt
  • 1 level teaspoon mustard powder
  • 4oz/113g button mushrooms, sliced
  • Few sprays of Fry Light oil
  • Freshly ground Balck pepper
  • Parsley to garnish
method
  1. Pre-heat oven to 180°C/350°F/gas mark4.
  2. Spray Fry Light oil onto a shallow baking dish and put in the fish fillets. Mix together the yogurt, sliced mushrooms, mustard, pepper and 4oz/113g of the grated cheeese
  3. Spread the mixture over the fish and bake in the oven for 25 minutes.
  4. Sprinkle the remaining cheese on the top and return dish to the oven for about 10 minutes or until the cheese melts.
  5. Garnish with sprigs of parsley and serve with green salad
