ingredients
  • 1lb/454g lean braising steak, trimmed and cut into cubes
  • 2 onions, chopped
  • 1 clove of crushed or chopped garlic
  • 1 x 14oz/392g tin of chopped tomatoes
  • Half pint/300ml beef stock
  • 2 tablespoons chopped fresh mixed herbs
  • 1 tablespoon tomato ketchup
  • 1 red pepper, chopped
  • 1 courgette, sliced
  • 1 small aubergine, cut into chunks
  • Salt and black pepper
method
  1. Pre-heat oven to 170°C/325°F/gas mark 3. Place the meat, onions and garlic in an ovenproof casserole. Add the tomatoes, stock, herbs, ketchup and seasoning
  2. Cover and cook in the oven for 1 hour 30 minutes.
  3. Remove the casserole from the oven and stir in the red pepper, courgette and aubergine. Cover and cook for a further 30 minutes, stirring once.
