Quick Coq Au Vin

  • 1lb/454g skinless chicken breast fillets, chopped
  • 3oz/84g lean back bacon rashers, chopped
  • 8 shallots, peeled and chopped
  • Fry Light
  • 8oz/226g button mushrooms, halved
  • 150ml chicken stock
  • 150ml red wine
  • few drops gravy browning
  • 1 tablespoon cornflour
  1. Spray a non stick pan with Fry Light and heat. Add the shallots and the bacon and cook for 2-3 minutes.
  2. Add the chicken pieces, mushrooms, stock, wine, gravy browning and seasoning
  3. Stir and simmer for 20 minutes.
  4. Mix the cornflour with a little water and pour into the pan. Stir continuously untilt he sauce is thickened.
