Pork Stroganoff
  • Serves 4

  • 12oz/336g lean pork fillet
  • Fry Light
  • 2 garlic cloves, chopped or crushed
  • 2 medium onion, finely chopped
  • 1oz/28g plain flour
  • 2 tablespoons tomato puree
  • 425ml chicken or vegetable stock
  • 4oz/114g button mushrooms, sliced
  • 1 green pepper, sliced
  • Pinch of nutmeg
  • 4 tablespoons fat free Greek yogurt
  • Salt and black pepper to season
  1. Trim any visible fat from the pork and cut into half inch wide strips if you can
  2. Spray a non-stick pan with Fry Light and gently cook the pork, onion and garlic for 4-5 minutes until lightly browned.
  3. Stir in the flour and tomato puree, pour in the stock and stir. Add the mushrooms, green pepper, salt, pepper and nutmeg. Bring to the boil and cover. Simmer for 20 minutes until the pork is tender and cooked throroughly
  4. Remove the pan from the heat and stir in the yogurt. Serve with mixed vegetables.
