Mandarin Torte
  • Serves 4
  • UNITS: per serving (using fruit from allowance)
  • FAT POINTS: per serving (using fruit from allowance)
  • CALORIES: 123 per serving
  • 8oz/224g low fat cottage cheese, seived or liquidised
  • 8oz/224g tin mandarin orange segments in own juice
  • 2 egg whites
  • 1 sachet sugar-free orange jelly
  • Quarter of a pint/150ml low fat fromage frais
  • Juice and zest of 1 lemon
  1. Make up the sugar-free jelly as directed but only fill to half a pint including juice from mandarin oranges.
  2. Allow to cool slightly then stir jelly mixture into cottage cheese with lemon juice and zest.
  3. Stir in the mandarin oranges and reserve a few for decoration.
  4. Add well beaten egg whites and fold in gently but thoroughly. Add the fromage frais and mix well.
  5. Pour into a 7" cake tin or deep flan ring with a loose base - well greases and lined with parchment. Chill until firm.
  6. Turn onto a serving plate and decorate with mandarin segments
