Corned Beef Hash

  • CALORIES: 173 per serving
  • 12oz/336g very lean corned beef, cubed
  • 1 large onion, chopped
  • 3 eggs
  • 8oz/226g fat-free cottage cheese
  • Pinch of dried mixed herbs
  • Salt and pepper to season
  1. Mix the cubes of corned beef and chopped onion together and place in the bottom of a flan dish and press down well.
  2. Beat the eggs with the cottage cheese, season with salt and pepper and mixed herbs. Pour this mixture onto the corned beef and onion base.
  3. Place in oven at 180C/375F/Gas 4 for 30 minutes or until set and golden brown.
  4. Serve hot with green vegetables or cold with a tomato salad.
