Ratatouille Sauce

  • 1 medium onion
  • 1 clove garlic
  • 1 green pepper, 1 yellow pepper
  • 1 medium courgette
  • 4oz/113g button musrooms
  • 14oz/392g can chopped tomatoes
  • 2 tablespoons tomato puree
  • 1 teaspoon dried mixed herbs, or chopped fresh herbs if you prefer
  • 1 teaspoon sugar substitute
  1. Peel and chop the onion and garlic
  2. Deseed and chop the peppers, trima nd slice the courgette and halve the button mushrooms
  3. Place all the vegetables in a saucepan and stir in the chopped tomatoes and tomato puree.
  4. Add the dried or fresh herbs, sugar substitute and plenty of seasoning. Bring to the boil and simmer for 20 minutes. Ideal served over pasta from your allwance or over grilled chicken or fish.
