Minced Beef & Vegetable Layer

ingredients
  • 1lb/454g minced beef (12% fat maximum)
  • 2 medium onions, sliced thinly
  • 12oz/339g courgettes, sliced
  • 2 tablespoons chopped fresh parsley
  • 1 egg
  • 4 large tomatoes, sliced
  • 1.5lbs/680g leeks, sliced
  • Quarter pint/150ml beef stock
  • 2oz/56g half fat cheese, grated
  • 5oz/141g low fat natural yogurt
  • Salt & black pepper
method
  1. Pre-heat oven to 200°C/400°F/gas mark 6. Mix the mince with the onion and chopped parsley and season with salt and pepper. Place in a large casserole dish.
  2. On top of the meat, layer the sliced tomatoes, then onions, then leeks and finally courgettes. Pour over the beef stock. Cover and bake for 1 hour.
  3. Remove from the oven. Mix yogurt, egg, cheese, salt and pepper and pour over the vegetables as a topping. Return to the oven for 15 minutes or grill until golden./li>
