Tuna Quiche

  • 14oz/400g tin of tuna in brine or spring water
  • 1 red onion, chopped
  • 4 eggs, beaten
  • lemon juice to taste
  • 2oz/56g half fat cheese, grated
  1. Preheat oven to 190C/375F/gas mark 5
  2. Slice the onion and simmer in non-stick pan until all the water is evaporated
  3. Drain the tuna and flake. Place in the bottom of an ovenproof dish and sprinkle with lemon juice. Layer the onions on top.
  4. Pour over the beaten eggs and top with grated cheese
  5. Cook at for 30-40 minutes until set. Can be eaten hot or cold
