Apple Souffle

ingredients
  • 1.5lbs/681g cooking apples
  • Sugar substitute, to taste
  • Pinch of ground cinnamon
  • 3 medium eggs, separated
  • 8oz/227g very low fat natural cottage cheese, seived
method
  1. Preheat the oven to 180C/350F/Gas 4.
  2. Peel, core and slice the apples and place them in a microwaveable bowl with the sugar substitute and the cinnamon. Microvave until the fruit is softenend
  3. Place the apples in a deep ovenproof dish, or 6 individual dishes. Whisk the egg whites until fluffy, then fold in the beaten egg yolks and cottage cheese using a metal spoon. Pour over the apples and bake for 20 minutes, or until golden brown.
