Fish Steaks With Savoury Sauce

  • 2 x 6oz/169g boneless, skinless white fish steaks, any variety
  • half a small leek, finely sliced
  • 1oz/28g half fat grated cheese
  • 2 tablespoons sweetcorn
  • 2 tablespoons skimmed milk
  • 2 tablespoons 0% fat Greek yogurt
  • 1 teaspoon cornflour
  • Salt & black pepper
  • Watercress, for garnish
  1. Place the fish steaks on a microwave proof dish, top with the leeks, cover and microwave on HIGH for 4-5 minutes. Leave to stand for 2 minutes.
  2. Blend the cornflour with the yogurt, add the milk, sweetcor and cooking juices from the fish and seasoning.
  3. Cook the sauce in the microwave on HIGH for 1 minute, stirring after 30 seconds. Stir the grated cheese into the thickened sauce and pour over the fish steaks.
  4. Garnish with fresh watercress sprigs.
