Turkey Vegetable Soup

ingredients
  • 6oz/228g turkey steak
  • 1 leek, sliced
  • 3 carrots, sliced
  • 2 sticks celery, chopped
  • 3oz/84g white cabbage, chopped
  • 3oz/84g button mushrooms, halved
  • 2 chicken stock cubes, dissolved in 2 pints of boiling water
method
  1. Heat oven to 180C/350F/Gas Mark 4
  2. Cut the turkey steak into roughly 1" cubes. Place in a large casserole dish.
  3. Add chopped vegetables and pour over the chicken stock. Mix well and cover.
  4. Cook in the oven for 1 and a half hours.
