Cottage Cheese Souffle

ingredients
  • 3oz/84g 0% fat cottage cheese (with chives if possible)
  • 1 egg separated
  • Salt & pepper
  • 2 spring onions, diced
method
  1. Mix the cottage cheese, diced spring onions with the egg yolk.
  2. Whisk the egg white until stiff.
  3. Fold into the cheese mixture and season with salt & pepper.
  4. Bake at 180°C/350°F/gas mark 4 for 20 minutes.
  5. Serve immediately, with a green salad.
