Pumpkin Soup
  • Serves 6

  • 2lb/900g pumpkin flesh, cubed
  • 1 large onion, chopped
  • 1-2 garlic cloves, crushed
  • 1 large potato cubed
  • 1.5 pints vegetable or chicken stock
  • 1 level teaspoon curry powder, mild or medium strength
  • 1 bay leaf
  • Salt & black pepper
  • Fry Light
  1. Boil the pumpkin cubes and the bay leaf in water until nearly tender.
  2. Sweat the onion in Fry Light in a large saucepan until transparent.
  3. Add the crushed garlic to the onion, stirring well to avoid burning. Stir in the curry powder.
  4. Add the cooked pumpkin cubes. Add the potato cubes, stock, salt and pepper. Simmer for about 25 minutes, until cooked.
  5. Blend to a creamy consistency and serve hot.
