Meat Loaf
  • Serves 4
  • UNITS: 3 per serving
  • FAT POINTS: 2.5 per serving
  • CALORIES: 321 per serving
  • 1lb/454g very lean minced beef
  • 2oz/56g sultanas
  • 5 dried apricots, diced
  • 2 teaspoon curry powder made into a paste with few sprays of Fry Light
  • 1 garlic clove, crushed
  • Half a beef stock cube, crumbled
  • Pinch of dried herbs
  • 1 large onion, chopped
  • 1 large egg
  • Salt and black pepper to season
  1. Pre-heat oven to 180C/350F/gas mark 4.
  2. Brown the minced beef and onion in a non-stick pan until just tender. Remove any excess fat.
  3. Place Mix in all the remining ingredients and place in a non-stick 2lb loaf tin and cook in the oven for 30-40 minutes
  4. Serve with mixed vegetables and gravy. Can be eaten cold with salad and pickles.
