Wild Rice Salad

ingredients
  • 6oz/169g cooked wild rice (use brown rice if preferred, or a mixture of the two)
  • Half a red pepper, chopped
  • Half a green pepper, chopped
  • 5oz/140g canned sweetcorn, drained
  • 3 medium tomatoes, chopped
  • 1 stick celery, chopped
  • 2oz/56g sultanas
  • 4 tablespoons chopped fresh basil
  • Fresh parsley sprigs to garnish
  • FOR THE DRESSING:
  • 3 tablespoons cider vinegar
  • 1 teaspoons lemon juice
  • 2 tablespoons chopped fresh parsley
  • 2 teaspoons sugar substitute e.g Canderel
  • Salt & freshly ground black pepper
method
  1. For the salad, combine all the ingredients in a large bowl.
  2. For the dressing, mix all the ingredients and combine with the salad before serving.
