Penne & Rocket Salad
  • Serves 8
  • UNITS:10 per serving (not recomended for Unit Plan)
  • FAT POINTS: 0.5 per serving using turkey rashers, 1.5 using bacon (Use pasta from your allowance)
  • CALORIES: 172 per serving
  • 11oz/308g dry weight penne pasta
  • 1oz/28g fresh rocket leaves
  • 6 turkey rashers or 4 very lean back bacon rashers
  • Fry Light
  • Small can of sweetcorn, drained
  • 1 level teaspoon wholegrain mustard
  • 12 cherry tomatoes, chopped
  • 2 tablespoons unsweetened orange juice
  • 2 tablespoons lemon juice
  • 1 tablespoon runny honey
  • Salt & freshly ground black pepper
  1. Cook the pasta in lighlty salted boiling water for 12-15 minutes or until just tender. Drain and set aside to cool.
  2. Meanwhile grill the turkey or bacon rashers a few minutes each side until crisp, turning once. Remove from the grill and roughly chop.
  3. Add the drained sweetcorn, chopped tomatoes, turkey or bacon pieces and rocket leaves to the pasta, season with salt and black pepper and toss together carefully.
  4. In a bowl beat together the mustard, orange and lemon juice, a few sprays of Fry Light and the honey. Season and pour over the salad and toss. Serve immediatley.
