Quick Cheese & Tomato Pizza

  • UNITS: 5.5 per serving
  • FAT POINTS: 1.75 per serving (bread from allowance)
  • CALORIES: 188 per serving
  • 4 wholemeal pitta breads
  • 2 tablespoons tomato puree
  • 2 tablespoons tomato ketchup
  • 1 teaspoon dried mixed herbs
  • 4 spring onions, chopped
  • 4 medium tomaties, sliced
  • 4 mushrooms, sliced
  • 1 pepper, any colour, sliced thinly
  • 4ox/113g half fat hard cheese, grated
  1. Mix tomato puree and tomato ketchup with dried herbs and spread over the pitta breads
  2. Arrange sliced tomatoes on top. Add slices of pepper and mushroom.
  3. Mix grated cheese with chopped sping onions and sprinkle over the top of the pittas.
  4. Place under a hot grill until cheese melts. Great quartered and served at a buffet with plenty of fresh salad.
