Pineapple & Coconut Cream Torte

  • 8oz/224g flavoured fat free fromage frais - any flavour
  • 8oz/224g plain fat free fromage frais
  • 2oz/56g fresh pineapple or pineapple chunks in own juice
  • 1 sachet sugar free lime or orange jelly
  • 2oz/56g dessicated coconut
  • 2 eggs, separated
  1. Make up the sugar free jelly to quarter of a pint, allow to cool and stir into the plain fromage frais
  2. Add flavoured fromage frais and 1oz/14g of the coconut to the mixture, add the egg yolks and blend together
  3. Whisk egg whites and gently fold into the mixture. Pour into a mould and leave to set in the fridge.
  4. Turn out when set, cut the pineapple into chunks and arrange on the top in a circle and sprinkle on the remaining coconut
