Coronation Chicken
  • Serves 4
  • UNITS: 1 per serving

  • CALORIES: 231 per serving
  • 4 x 4oz/113g boneless, skinless chicken breasts
  • small tin of mandarin oranges in own juice
  • 2 tablespoons low fat mayonnaise
  • 1 teaspoon curry powder made into a paste with 2-3 sprays of Fry Light one calorie oil
  • Salt & pepper
  • 2 tablespoons 0% fat Greek yogurt
  • Lettuce leaves, chopped coriander leaves and lime slices to serve
  1. Cook chicken breasts in a little lemon juice with salt & pepper in the microwave on MEDIUM setting for 8 minutes or until cooked through. Set aside until cold.
  2. Mix low fat mayonnaise and yogurt together.
  3. Put curry powder into a small dish and spray with enough Fry Light to make into a paste.
  4. Add to mayonnaise and yogurt mixture.
  5. Chop the cold chicken into bite sized pieces and add mandarins. Mix all the ingredients together. Arrange lettuce leaves around a plate and pile Coronation Chicken in the centre.
  6. Decorate with chopped coriander leaves and slices of lime.
