Turkey Treat

ingredients
  • 1.5lbs/680g lean turkey steaks, sliced
  • 1 onion, sliced
  • 1 green pepper, thinly sliced
  • 3 courgettes, thinly sliced
  • 4oz/113g mushrooms, sliced
  • 4 tomatoes, sliced
  • 1 medium cauliflower, divided into small florets
  • 4oz/113g grated half fat cheese
  • Fry Light Oil
  • Salt & pepper
  • Fresh parsley to garnish
method
  1. Pre-heat oven to 190C/375F/gas mark 5
  2. Spray a non stick pan with Fry Light and cook onion and turkey for about 5 minutes
  3. Lay the onions on base of an ovenproof dish then layer the turkey slices followed by courgette slices, peppers and mushrooms. Season well.
  4. Cover with a foil lid and bake in the oven for 25 minutes.
  5. Place the cauliflower florets on top and sprinkle with grated cheese and tomato slices. Return to the oven and bake for a further 10 minutes or until the cauliflower is tender and the cheese melted. Garnish with parsley before serving.
