Lemon Chicken
  • Serves 4
  • UNITS: 2 per serving

  • 4 x 4oz/113g boneless, skinless chicken breasts
  • 3 garlic cloves, crushed
  • Finely grated zest and juice of 3 lemons
  • 1 red chilli, deseeded and finely chopped
  • 2 tablespoons clear honey
  • 2 teaspoons ground coriander
  • Salt & black pepper
  • Fresh coriander leaves and lemon slices to serve
  1. Pre-heat oven to 200C/400F/Gas mark 6
  2. Season the chicken well with salt and black pepper.
  3. Mix together the crushed garlic, lemon zest and juice, chilli, honey and coriander to make a marinade. Turn the chicken breasts in the marinade to coat.
  4. Place the chicken in a non metallic dish, cover and leave to marinate in the fridge for at least 2-3 hours or overnight.
  5. Roast the chicken in the marinade in preheated oven for 30-35 minutes until the chicken is tender.
  6. Serve with fesh chopped coriander and lemon slices.
