Slimmer's Onion Flan
  • Serves 4
  • UNITS: 0.5 per serving
  • FAT POINTS: 1.5 per serving (using 'free' egg)
  • CALORIES: 151 per serving
  • 1lb/454g frozen spinach, thawed.
  • 1lb/454g onions, chopped
  • 40z/113g low fat natural yogurt
  • 2 eggs
  • 4oz/113g half fat cheese
  • 1 large tomato, sliced to decorate (optional, not pictured)
  • Pinch of mustard powder
  1. Preheat oven to 200C/400F/gas mark 6
  2. Blanch the spinach in boiling water for 2 minutes. Drain really well and use a fork to seperate.
  3. Arrange spinach in an 8 inch flan dish, completely covering the base. Set aside.
  4. Simmer onions in a little boiling water until tender. Drain well.
  5. Put the yogurt in a bowl add eggs and beat until mixture is smooth. Add grated cheese, onions and mustard. Season well and pour onto spinach base. Top with tomato slices if desired.
  6. Bake in the oven for 30 minutes or until firm.
