Coconut Pyramids
  • Serves 12
  • UNITS: 0.25 per pyramid
  • FAT POINTS: 2 per pyramid
  • CALORIES: 75 per pyramid
  • 2 eggs
  • 1oz/28g Canderel of similar sugar substitute
  • 4oz/113g dessicated coconut
  • 3 washed glace cherries, quartered
  • 12 paper cases
  1. Preheat the oven to 180C/375F/Gas mark 4.
  2. Put the eggs, coconut and sugar substitute into a bowl and mix well until it forms a large ball.
  3. Divide into 12 portions and mould into pyramid shapes. This is a bit messy, you will need to wash your hands a few times and rinse them in cool water!
  4. Place each pyramid into a paper case. Pop a cherry quarter on top of each one.
  5. Bake for 15-20 minutes or until slightly golden.
