Cheesy Cod & Cauliflower Pie

  • Half a medium cauliflower cut into florets
  • 6oz/168g fresh or frozen boneless, skinless cod steak
  • 2oz/56g half fat grated cheese
  • Half a large onion, chopped
  • 4oz/113g mushrooms, sliced
  • 1 tablespoon chopped fresh parsley
  • 2 tablespoons lemon juice
  • Few sprays of Fry Light oil
  • Salt and pepper to season
  1. Pre-heat oven to 190C/375F/gas mark 5.
  2. Steam or boil the cauliflower and mash. Set aside to use as the topping later.
  3. Steam cod until cooked and gently flake.
  4. Fry the chopped onion and sliced mushrooms in a little Fry Light until softened.
  5. Place the flaked fish in an ovenproof dish and sprinkle over parsley (leave a little for the top) and lemon juice and season with salt & pepper.
  6. Put the onions and mushrooms on the top and cover with the mashed cauliflower. Sprinke the grated cheese and left over parsley over the top.
  7. Bake in the oven for 25-30 minutes.
