Leek & Potato Soup

ingredients
  • 2 large leeks (400g), finely chopped
  • 2 potatoes (400g) cubed
  • 1 clove garlic, finely chopped
  • 2 pints vegetable stock
  • Salt & Black pepper
  • Half pint of skimmed milk
  • Fry Light oil
method
  1. Spray a large saucepan with Fry Light and add the chopped leeks. Cook until softened.
  2. Add all the remaining ingredients except the milk.
  3. Cover and simmer for 25 minutes, stirring occasionally.
  4. Blend until smooth, add milk and re-heat before serving.
