Celery Soup

ingredients
  • 1 pint vegetable stock
  • 1 pint skimmed milk
  • 1 large onion
  • 2 heads of celery
  • Salt & Black pepper
  • Fry Light oil
method
  1. Cut the celery into small pieces, peel & chop the onion.
  2. Spray a large saucepan with Fry Light oil, add onion and celery. Cook and stir until starting to soften.
  3. Add stock and seasoning, cover and simmer for 25 minutes.
  4. Blend until smooth, return to pan and add milk, re-heat and serve.
