Slimmer's Mince Pies

  • UNITS: 2 per mince pie
  • FAT POINTS: 0.5 per mince pie
  • CALORIES: 81 per mince pie
  • 8 sheets Filo Pastry
  • 4 tablespoons mincemeat
  • 1 egg white beaten
  • Fry Light
  • Icing sugar to decorate
  1. Preheat the oven to 190C/375F/Gas 5. Lightly spray a non-stick mince pie tin with Fry Light for easy removal.
  2. Stack the pastry sheets on top of one another. Working quickly to prevent pastry drying out, use scissors to cut the stack into 6 squares so that you end up with 48 individual squares.
  3. Place a pastry square in each well then brush with a little egg white and place another square at a slight angle to the first. Repeat this until you have 4 squares in total.
  4. Place enough mincemeat in each to fill.
  5. Brush to edges of the squares with egg white and scrunch up to seal.
  6. Bake in the oven for 10 minutes until the pastry is crisp and golden. Just before serving dust with a little icing sugar.
