ingredients
  • 12oz/336g cooked chicken, chopped
  • 2 hard boiled eggs
  • 4-6 sticks celery, thinly sliced
  • 8oz/226g fresh pineapple, cut into chunks
  • Salt & pepper
  • 2oz/56g mushrooms, finely chopped
  • 10oz/280g fat free cottage cheese
  • 1 onion, finely chopped
  • 1oz/28g finely chopped almonds
  • 2 tablespoons lemon juice
  • chopped fresh chives
method
  1. Remove the yolks from the eggs and set aside.
  2. Chop the egg whites
  3. Blend or seive the cottage cheese until smooth
  4. Combine all the other ingredients including chopped egg whites and lemon juice. Serve on a bed of lettuce, garnished with the egg yolks and chopped chives.
