ingredients
- 12oz/336g cooked chicken, chopped
- 2 hard boiled eggs
- 4-6 sticks celery, thinly sliced
- 8oz/226g fresh pineapple, cut into chunks
- Salt & pepper
- 2oz/56g mushrooms, finely chopped
- 10oz/280g fat free cottage cheese
- 1 onion, finely chopped
- 1oz/28g finely chopped almonds
- 2 tablespoons lemon juice
- chopped fresh chives

method
- Remove the yolks from the eggs and set aside.
- Chop the egg whites
- Blend or seive the cottage cheese until smooth
- Combine all the other ingredients including chopped egg whites and lemon juice. Serve on a bed of lettuce, garnished with the egg yolks and chopped chives.
